Ca’ Pigneto: Mellow as the mermaids’ voices

It was in front of a bottle of Amarone, during a conference in Argentina, that the surgeon Carlo Adami had the two intuitions that changed his life: a new surgical technique and the idea of recovering the ancient family vineyards. On the labels of Cà Pigneto stands out a mermaid, taken from Paola Serenelli’s family coat of arms. Paola is Carlo’s wife and she manages the winery together with their children Angelica, Nicolò and Veronica. The winery produces the typical wines of Valpolicella: Amarone, Valpolicella Superiore Ripasso and Recioto, a wine that Ca’ Pigneto promotes also abroad: “It is necessary to let the world know our made in Italy products and it is necessary to stand up for it”. Amarone is made of Corvina, Rondinella and a very little percentage of Molinara. These grapes grow on clayey and aired soils that rise in the heart of a natural amphitheater. They are manually harvested, dried three months and then pressed. After a long fermentation, they age 30 months in Slavonia oak barrels and refine six months in bottle to get a purple wine with ripe fruit perfumes and leather aromas: a mellow wine like the voices of the mermaids that enchanted Ulisse.
